Our Process

Elevate the art of fish smoking to new heights

Our smoked salmon is the result of 30 years of experience and knowledge in French gastronomy. Salmon processing is a handcrafted natural method with no artificial ingredients, no coloring products, no preservatives, and no sugar.

Our products are never frozen during all the different stages of our production process. We offer salmon naturally smoked with exceptional flavors made with 100% natural, untreated beech sawdust.

Our salmon is salted by hand with pure sea salt to guarantee better quality control. The aromas of natural essential oils coat the salmon with a sweet smoke. Our low-temperature smoking technique is key to savoring the true quality and taste of salmon, while also resulting in a much healthier end product.

THE HEART OF THE PROCESS

François Gerard, a native of France with extensive training in marine aquaculture and fisherman school, earned the prestigious “Award of Excellence of French Fishmongers” in 2021. He is passionate about seafood and has always worked in the high-quality seafood industry, specializing in very fine smoked salmon production for the past 16 years.

Our salmon is flow directly to our processing facilities from rigorously vetted producers in Pure Patagonia, Scotland, the Faroe Islands, and Norway, guaranteeing the excellence of our products with each delivery. All ingredients used in our process are 100% natural, with clear origin traceability and absolutely no preservatives, coloring, or sugar. 

Ocean Pearl is a GMP certified facility and exclusively uses responsibly farmed fish from ASC certified producers.
